Recently at work, our lunch breaks have been stopped, so I have had to find some recipes that are quick and easy to make, healthy, and will last a few days and can be easily taken into the office.
One of these is a tasty tomato soup recipe, which is so easy, and I thought I would share with you guys:
Ingredients
Olive oil
1 red onion, roughly chopped
1 carrot, peeled and roughly chopped
1 celery stick, chopped
3 400g tins of plum tomatoes
1tbsp sweetener
600ml vegetable stock
2tbsp tomato puree
Salt and pepper
Handful of fresh basil for garnishing
Method
1. Add a lug of oil to a large saucepan and add the carrot, celery and onion over a low heat for 5 minutes
2. Add the tomatoes, puree, sweetener and veggie stock and bring to the boil. Cover, reduce the heat and simmer for 15 minutes.
3. Remove from the heat, leave to cool slightly and then blitz to make the soup smooth. (I leave mine whole and then blitz one portion in the nutribullet each day.)
4. Season, add some basil and serve with pitta bread.
